There are drop down menus that allow you to select different images from your photostream. Choose the set you want to change permissions on. Select and drag the images into the work area. Go to the menu above the work area where you see the menu item Permissions. You can also change the privacy settings on each photo, you should see a lock looking image that you can click on and select the appropriate privacy you want or by going into the Camera Roll feature and looking for the same lock image at the bottom right of the image. Hold down the shift key and left-click the image at the farthest right. That will leave the images in the work area, but empty the filmstrip. Shift-click all the images in that album and drag them up. You'll eventually have all the photos in the work area and you can batch edit the permissions.
Currently, when I set the permission on one album, it becomes the default permission on all my albums.
